My 'comfort-no discomfort' dish of the season!

As mentioned in my podcast this week, here is the recipe to my wonderful Msoki, a traditional Sephardi Tunisian-Mediterranean dish filled with wonderful vitamins and flavors of the Spring!

I’ll be honest, it is quite a bit of work shopping for all of these fresh vegetables and peeling and cutting them all, but you end up making a quantity large enough to enjoy it for several meals. The dish reheats very well and tastes even better the day after!

  • 1kg lamb shoulder, cubed and seasoned with salt, pepper and 1 tsp cumin and paprika

  • 1 celery stalk, sliced

  • 2 leeks sliced

  • 1 small green cabbage

  • 2 fennel heads

  • 3 parsnips, diced

  • 2 carrots, diced

  • 2-3 potatoes, diced

  • 4 to 6 courgettes, diced

  • 2 onions, diced

  • 2kg of fresh spinach

  • Olive Oil

  • 4 fresh artichoke hearts cut into chunks

  • 2 bags of frozen peas

  • 2 bags of frozen fava beans

  • 1 bouquet of fresh mint, chopped

  • 1 bouquet of fresh cilantro, chopped

  • 1/2 bouquet of parsley, chopped

  • 1 stick of cinnamon

  • 6 garlic, chopped

  • Harissa and cayenne pepper to taste

  • Salt to taste

  • My secret is to fry a few dried hot chillies in the oil first, and then put them aside for later. It fragrances the oil and gives just the hotness necessary to the dish too.

Chose a large, tall cooking pot. Pour your olive oil on a medium flame. Add your onions, garlic, and then the lamb. Or no meat if you chose to prepare a vegetarian version of it. Once golden, add your cinnamon, harissa and pepper, followed by the harder vegetables first: pasnips, leeks, fennel, carrots, cabbage. Then add your potatoes, courgettes, artichoke hearts, peas, fava beans, and of course the spinach! You might need to cover and start letting it cook a bit, in order to create more room to add more of your fresh spinach! Add salt and harissa to your taste. Keep low flame and stir gently as you go. Cook for an hour and keep on a very low flame until you are ready to eat! You should be able to taste the mint and all the beautiful flavors of the Mediterranean cuisine! Bon Appetite!!! 😋 😊 💜
